Rugby World Cup 2015 - The Scottish Sandwich
Have fun in the kitchen making flag sandwiches - you never know, it might be just the support your team needs!
4 slices Roberts Soft & Fluffy White Bread (Thick Cut)
Low-fat olive spread
225g flaked hot-smoked salmon
A few soft little gem lettuce leaves
1 small red onion, cut into very thin rings
Smoked paprika for decoration
For the dressing:
2 tbsp sweet chilli sauce
1 tsp hot chilli sauce (optional and to taste)
2 tbsp fat-free Greek yogurt
1 tbsp lemon juice
Freshly ground black pepper
1. Lay the bread slices in pairs and cut out heart shapes.
2. Combine the dressing ingredients and gently mix in the flaked salmon.
3. Spread the bread thinly with low-fat olive spread. Lay a few lettuce leaves attractively on 2 of the hearts, then top with the salmon filling and red onion rings, then a few more lettuce leaves and the tops of the sandwiches.
4. Dust the hearts with a little smoked paprika.
